I do the newsletter at my apartment complex every month, I seriously LOVE to do it! I only have to do the front and the back of it. The company that we go through does the middle. So every month they will put a YUMMY recipe in it, and the newsletter was finally sent out and this is what came in it! So here is the recipe!
Ingredients:
- 8 medium potatos, peeled and cut into 1-inch chunks
- 1 c. evaporated milk
- 1/2 c. Sour Cream
- 1 t. salt
- 1/2 t. black pepper
- 2 c. shredded cheese ( i just used a normal 2 cup bag of shredded cheese)
- 6 slices of bacon, cooked and crumbles
- Slied green onions (optional but highly reccommened)
Directions:
Preheat oven to 350 F. Grease a casserols dish. Pleace potatoes in a large pot. Cover them with water, bring to a boil. Cook over medium heatfor 15 to 20 mins or until tender and then drain.
Return to pot; add evaporated milk, sour cream, salt and pepper. Beat with a handheld mixer until smooth. Stir in 1 1/2 c. cheese and half the bacon. Spoon the casserole into the dish.
Bake for 20 to 25 minutes or until heated through. Top with remaining 1/2 c. cheese, remaining bacon and green onions. Bake for an additional 3 minutes or until cheese is melted.
We ate this with some yummy veggies! Enjoy!!
**Did you know that in a recipe if it calls for "T" it means tablespoon and "t" means teaspoon? Rob is soooo DANG insightful!**
